vegan lemon poppy seed scones!

i made vegan lemon poppy seed scones! they came out perfect, except they were exactly like lemon poppy seed cookies. even after i played around with an online recipe where many of the comments said that these scones were perfect, except that they were actually cookies.

good thing i happen to like cookies.

here is the recipe i used, which adapted slightly from one i found on allrecipes.com.


vegan lemon poppy seed scones/cookies

ingredients:
2 cups all-purpose flour
3/4 cup white sugar
4 teaspoons baking powder
1/2 teaspoon salt
3/4 cup margarine
2 lemons, juiced
2 tablespoons poppy seeds
1/4 cup soy milk

directions:
preheat the oven to 400 degrees F. grease a baking sheet. sift the flour, sugar, baking powder and salt into a large bowl. cut in margarine until the mixture is the consistency of large grains of sand. it helps to use hands. stir in poppy seeds and lemon juice. gradually stir soy milk into the dry ingredients until the batter is moistened, but still thick like biscuit dough.
spoon 1/4 cup sized plops of batter onto the greased baking sheet so they are about 3 inches apart. this made 18 for me. bake for 10 to 15 minutes the preheated oven, until golden.

first let me again say that while i do not enjoy the feel of margarine-coated hands, it really is the best/quickest way to make sand out of your dough. observe the pretty grain-like texture:



try not to think about the fact that you had to scrub your hands with the back of the sponge. concentrate on the part where you rinsed with the extra lemon juice. which looks like this:



adding lemon juice to the dough is fun. so is adding poppy seeds. poppy is a fun word, is it not?

and after. some of the cookies wanted to be closer to one another, and, really, who was i to say they couldn't?
